Stir Fried Bitter Gourd (Ampalaya) with Beef Ingredients: 1/4 kg or 250 grams beef, sliced in strips 1 Bitter Gourd (ampalaya) split in half, sliced crosswise and de-seeded 1 piece of onion, diced 1 clove garlic, minced 1 glass of water 2 tablespoons cooking oil 2 teaspoons cornstarch
For the marinade: 3 tablespoons soy sauce 1 teaspoon Oyster sauce A pinch of salt A pinch of pepper
Cooking Direction: 1. Wash the Bitter Gourd with water and drain. Put generous amount of salt into the Bitter Gourd and mix it with your fingers. Add 1-2 glasses of water and drain. Squeeze out the remaining water from the Bitter Gourd. (This will lessen its bitter taste.) 2. In a separate bowl, add the soy sauce, salt, pepper and Oyster sauce into the beef. Mix it for a while and let it stay for about 5-10 minutes. 3. Sauté the garlic and onion. Then, add the marinated beef followed with a glass of water. Cover the pan and wait for about 15-20 minutes for the beef to soften. (If your beef is the soft type, then you can lessen your cooking time to avoid having it overcooked.) 4. Once your beef is soft and well-cooked, you can add the Bitter Gourd into the pan. Mix them altogether and let it stay for about 3 minutes to make sure that the Bitter Gourd is cooked properly. 5. Add cornstarch and Magic Sarap and stir. You will know that the cornstarch has done its purpose if you notice that the sauce has thickened already. Taste the dish to know if you need to add more salt, pepper or soy sauce.
Note: This recipe is good for 4-5 persons.
